The milk of our cows goes right to the centrifuge, while it is still warm. There, it is “separated” – about 10% of valuable cream is obtained that way – 90% skimmed milk is for the calves and the pigs. Some cream is for the coffee, but we use most of it to make our golden yellow butter. Yogurt, curd, mozzarella and whey is what we make of our cow’s milk, apart from milk and buttermilk, of course. Our two and a half year old oxen and our pigs are slaughtered in October, after a beautiful summer that they partly spent outdoors. The same happens to our ducks, geese and turkey hens. We try to save our chicken from the fox during the winter, as they provide our breakfast eggs. In autumn, we produce our popular pear and plum Schnaps in our in-house distillery.
We spend lots of our time in the forest. We collect everything for our wood chip stove – from the trunk to the branch. After a drying period of one year, everything is shredded into wood chips.
